Beef and Broccoli Stir-Fry

1/4 cup stock
1 tablespoon hoisin sauce
1/2 tablespoon oyster sauce
1/2 tablespoon soy sauce
1 teaspoon cornstarch
1 teaspoon rice vinegar
1/2 teaspoon sesame oil
1/2 teaspoon sambal olek
12 ounces sirloin steak
5 cups broccoli, coarsely chopped
1/2 cup stock
2 tablespoons fat
1 onion, chopped
3 cloves garlic, minced
1 tablespoon ginger root, minced


In bowl, whisk together stock, hoisin, oyster and soy sauces, cornstarch, vinegar, sesame oil and sambal olek.

Cut beef across the grain into thin strips. Stir into sauce mixture and set aside.

Bring 1/2 cup of stock to a boil in a large skillet. Add broccoli, cover and steam for about 3 minutes or until broccoli is tender-crisp. Remove to a bowl and reserve the remaining stock.

Add some fat and stir fry the onions over medium high heat for 3 minutes add the garlic and ginger and cook for another 2 minutes.

Add the beef to the pan and cook until almost done. Return broccoli to the pan and cook, stirring frequently. Adjust the thickness of the sauce with the reserved stock.
