Cajun Breaded Chicken

3 tablespoon flour, all-purpose
1 teaspoon garlic powder
1 teaspoon cayenne
1/2 teaspoon chili powder
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1 egg
5 drops sriracha
5 drops tobasco sauce
1/3 cup dry bread crumbs
1 tablespoon dried kale
1 tablespoon cajun seasoning
1 teaspoon black pepper
2 tablespoons coconut oil or bacon fat
2 chicken breast halves, boned and skinned


Mix the first six ingredients and pour into a dish.

Beat the sriracha and tobasco sauce into the egg and pour into another dish

Mix the bread crumbs, kale, seasoning, and pepper and pour into a third dish.

Cut the chicken into whatever size pieces are suitable; dredge in the flour, egg, and breadcrumbs before frying in the oil over medium high heat until crisp and browned
