Chicken Frittata

1 tablespoon coconut oil or bacon fat
.5 medium onion, finely chopped
.5 stalk celery, finely chopped
.75 cup bell pepper, finely chopped
.75 cup cooked chicken, chopped
5 eggs
.5 tablespoon mustard
3 tablespoons sour cream
.25 cup milk
1/8 teaspoon sriracha
1/2 teaspoon fish sauce
1 tablespoon bread crumbs
1.5 cups cheese, grated *


Pre heat the oven to 350°.

Iin an oven proof skillet sauté the onion, celery and pepper in the oil over medium high heat until just softened.

Meanwhile whisk the eggs and the next 5 ingredients together.

Sprinkle the breadcrumbs and half the cheese over the contents of the skillet. Reduce the heat to low, add the chicken, pour in the egg mixture, and cook for 5 minutes.

Top with remaining cheese and bake for 12 to 15 minutes or until the cetre is just set.

* Many cheeses or combinations will work well in a fritatta. I use half mild gouda and half aged cheddar
