Chicken Salad

Serve on lettuce leaves with toast on the side.

3 servings


1 large chicken breast half
1 stalk celery
1 large green onion
1 1/2 inches cucumber
1 plum tomato, seeded
1 egg
2 teaspoons mustard
1/2 teaspoon sriracha
2 tablespoons mayonnaise
3 lettuce leaves


Cook the chicken by your favourite method and hard cook the egg.

Dice the first 5 ingredients under 1/4" and chop the egg.

Mix the last three ingredients and combine all the ingredients. Mix well adding extra mayonnaise as needed. Taste and season
