Chicken Salad Sandwiches

1 cup cooked chicken, 1/4" dice
2 tablespoons celery, chopped finely
2 tablespoons green pepper, chopped finely
2 tablespoons fennel, chopped finely
2 tablespoons cucumber, chopped finely
3 tablespoons mayonnaise
1/4 cup almonds, slivered, toasted
1 tablespoon sweet pickle relish
10 pimiento-stuffed olives, halved lengthwise
1 green onion, chopped finely
2 teaspoons prepared mustard
salt and pepper to taste


Combine all ingredients and spread on bread or toast

To use as an appetizer reserve the olives and put mixture on crackers topped with the half olives
