Drumstick Soup

1 1/2 pounds turkey drumstick
6 cups water
1 celery stalk, cut into chunks
1 carrot, cut into chunks
1 onion, sliced

2 medium potatoes, peeled and diced
2 medium carrots, thinly sliced
1 celery stalk, thinly sliced
3 green onion, thinly sliced
1/2 teaspoon marjoram
3 cups kale, torn


Put all broth ingredients in a pot and bring to a boil. Reduce heat, cover and simmer for three hours.

Remove and eserve the turkey. Strain broth discarding vegetables. Bring broth to a boil and reduce to 5 cups

Remove the meat from the drumstick and cut into bite sized dice.

Add remaining ingredients except kale, cover and simmer for 20 minutes or until veggies are almost tender. Stir in kale and simmer 5 more minutes. Season to taste.
