Green Eggs

1 cup spinach, thinly sliced
2 eggs
1 pinch nutmeg
1 pinch salt
1 pinch pepper
1/4 cup cream
2 tablespoons cheese, grated *


Preheat oven to 425 and put on a kettle of water

Put the spinach in a mini blender and chop.

Add the remaining ingredients and blend till smooth

Pour ingredients into a well greased ramekin. Place the ramekin in a pan and pour boiling water into the pan to about 1" depth

Cook for 15 minutes or until center is set.

* I used pecorino crotonese but most cheeses would work
Sour cream or yogurt would be good
Some crumbled bacon would also be good
