3/4 cup brown sugar
1 teaspoon vanilla
1 teaspoon lemon rind, grated
2 cups flour, all-purpose
1 tablespoon baking powder
1/4 teaspoon salt
1 cup milk
4 cups fruit, thinly sliced
2 tablespoons brown sugar
2 teaspoons cinnamon
2 tablespoons butter, melted
Cream 1/2 cup of butter and 3/4 cup sugar together. Beat in egg, vanilla, and rind.
Sift flour with baking powder and salt. Add dry ingedients to creamed mixture alternately with milk.
Spoon batter into a greased and floured 9" x 13"(3L) baking dish or two fluted pie plates. Cover with a layer of fruit slices.
Sprinkle with brown sugar and cinnamon and drizzle with butter
Bake at 350°F for 40 - 45 min.
Use peaches, apricots, pears, or apples
Freezes well wrapped in plastic film
