We call this chili. Others may call it hamburger stew. As long as I'm not called late to the table, I don't care.
1 pound ground pork
1 1/2 large onion, chopped
1 teaspoon thyme
1 teaspoon summer savory
1 cup celery, chopped
1/2 cup fennel, chopped
2 large carrots, thinly sliced
1 large green pepper, chopped
1 large red pepper, chopped
5 chipotle chiles in adobo sauce, finely diced
6 cups mushrooms, quartered
6 cloves garlic, coarsely chopped
108 ounces whole tomatoes, diced or crushed
57 ounces red kidney beans
38 ounces cannellini beans
Season the meat with pepper, brown, and set aside.
Sauté the onions for about 10 minutes adding the thyme and savory midway.. Add the celery, fennel, and carrots and cook for another 5 minutes.
Return the meat and any juices to the pan and add peppers, mushrooms, garlic and tomatoes. Cook until mushrooms shrink perceptibly then add beans. Cook until the beans just begin to break up tasting and adjusting.
This is the first batch made with only chipotles (I usually put in chili powder and cayenne). Might put in another one next time as it's not very hot.
