1 tablespoon extra virgin olive oil
1 pinch sea salt and freshly cracked pepper
4 red onions, sliced 1/4 thick
100 grams bacon, thick cut, diced fine (optional)
150 grams smoked ham, 1/4" cubes
1 cup milk
1 cup 10% cream
200 grams brie, rind removed
1 cup Cheddar cheese, 5 year old grated
1/2 cup Friulano cheese, grated
1 bay leaf
1/2 cup panko bread crumbs
1 tablespoon melted butter
Boil rotini for 8 minutes and strain.
Heat olive oil in a pan on medium, add onions and salt and sauté for 8 minutes. Reduce the heat to medium-low and sauté for another 35 minutes until caramelized.
Crisp the bacon then add ham and brown lightly.
Add milk, half and half, caramelized onions, sea salt, cracked pepper and bring to a boil. Reduce heat to medium-low and add cheeses and bay leaf, stir until the cheese is melted, about 5 minutes.
In a bowl, mix rotini with cheese sauce and transfer into an oven safe dish. Top with panko crumbs drizzle with melted butter and broil for a few minutes until the panko is golden brown and the edges crisp up.
