Ingredients
2 tablespoons oil
3 cloves garlic, thinly sliced
1/2 teaspoon sambal oelek
1 large tomato, diced
1/4 teaspoon fish sauce
4 ounces brie, cubed
1 tablespoon basil leaves, very thinly sliced (chiffonade)
1 green onion, thinly sliced
Preparation
Cook the pasta in well salted water until just al dente. Drain and set aside, reserving half a cup of the water.
Over low heat sauté the garlic in the oil until it begins to turn very light brown on the edges. Add the shrimp and cook until the shrimp are just opaque. Remove to a plate and keep warm
Increase the heat to medium high and add the sambal oelek. Cook for a minute or so stirring constantly. Add the tomatoes and fish sauce and cook for 3 to 4 minutes.
Return the shrimp an garlic to the pan then add brie, pasta, basil, and onion and stir until brie is completely melted. If more sauce is needed add a tablespoon or so of the pasta water

I had large shrimp so I cut them up. Use an appropriately sized pasta or your favouite
