Sausage Stuffing

enough for a 6 Kg turkey


1 1/2 pounds ground pork or sausage meat
1 1/2 cups dry bread crumbs
1 cup onion, finely chopped
1/4 cup parsley, chopped
1 teaspoon salt
1/4 teaspoon nutmeg
1/2 teaspoon sage, crumbled
black pepper (lots)
1/2 cup stock to moisten


If preparing the night before cook onions otherwise combine all ingredients and mix well

Makes enough stuffing for a 6 Kg turkey

Any extra can be rolled into balls and cooked with the turkey for the last hour.

Line a sheet pan with foil or a silicone baking sheet (better)

Use an ice cream scoop to form balls

Cook for 50 minutes at 325F turning at halfway point

For sausage balls only 1 Kg of meat will make 32 ice cream scoop size balls.
