Shrimp Stock

Whenever I buy shrimp I get them raw with the shells on. If I'm going to be really pressed for time then I might get then already peeled. If I don't have time to cook them myself then I make something else.


1/2 onion
1 small carrot
1 stalk celery
shrimp shells


Combine all ingredients and simmer for about 1/2 hour

I usually get about 3 cups of stock from the shells from a pound of shrimp.
Any other veggie scraps are fair game
