1 teaspoon fish sauce
1 teaspoon brown sugar
1 teaspoon rice vinegar
1/8 teaspoon chili paste
3/4 pound sirloin steak
1 tablespoon cornstarch
1 tablespoon soy sauce
1 tablespoon Sherry or Scotch
1/4 cup chicken or beef stock or water
1 teaspoon sugar
2 teaspoons toasted sesame oil
3 tablespoons oil or appropriate fat
1 tablespoon minced ginger root
1 tablespoon minced garlic
1/2 teaspoon sambal oelek
1/2 pound broccoli florets
1 green onion
Slice the beef into 1/8 inch strips: In a small bowl, stir together the first five ingredients, add the beef and let it marinate for 20 minutes.
Make the sauce while the beef is marinating. In a small bowl, dissolve the cornstarch in the soy sauce and stir in the sherry. Add broth or water, sugar and Oriental sesame oil.
Put 3 tablespoons oil in stir fry pan or wok, add ginger root, garlic, Sambal Oelek, and broccoli. Add beef and cook until meat is nearly done.
Stir sauce and add slowly until there is enough liquid.
Serve with basmati rice or rice vermicelli
Steam broccoli before using in this recipe.
