Roasted Garlic and Dried Tomato Cheese Spread

Yield 1 3/4 cup

Ingredients

10 large fresh basil leaves julienned
10 cloves roasted garlic
8 dried tomatoes, finely chopped *
1/4 cup Pecorino Romano, finely grated
1/4 cup Parmigiano Reggiano, finely grated
1/2 avocado
1 teaspoon fish sauce
1 tablespoon sambal oelek
1 cup mascarpone cheese

Preparation

Put everything except 1/2 of the mascarpone into a food processor and blend till well mixed. Add remaining cheese and incorporate well.

Taste and adjust.

Spread generously on focaccia and garnish with paper thin Calabrese salami, prosciutto, and halved stuffed olives (or whatever else strikes your fancy)
* I used oil packed because that's what I had.
