This quick dessert was the one we clamoured for the loudest.
Yield 27 1" x 1 1/2" bars
Ingredients
1 cup sugar
1 egg
3 tablespoons cocoa
1/2 cup graham cracker crumbs
1 teaspoon vanilla
20 graham crackers *
Cocoa Banana Frosting
Preparation
Combine butter, sugar, egg, and cocoa In a heavy saucepan. Bring to a boil and boil for one minute.
Remove from heat and stir in crumbs and vanilla.
Cover the bottom of a 9 inch square pan with crackers. Do not leave spaces.
Pour in the filling and spread evenly. BE GENTLE.
Top with another layer of crackers.
Let cool and frost. Cut into bars

Mom always made this with a plain chocolate frosting. The cocoa banana is my twist.
